When Christmas season comes I’m a peppermint mocha girl. Gingerbread lattes are good and eggnog ones aren’t bad, but the PM is my fave. And this year I’ve discovered the white PM and I’m even more in love. If you’re exceptionally lazy you can used canned whipped cream or skip it altogether (which would be a terrible life choice so please don’t tell me if you do). Roasted Carrot & Avocado Salad with Harissa Yogurt. Years ago… We’re talking many, many years ago here friends… my Mom served a salad with roasted carrot and avocado and I died. I inhaled it. I loved it, I ate a huge plate of it and then ate some more. And I have not stopped thinking about it since. Two important things to note here. First, I obsessed about this dish for literally years. Second, it took me literally years to get around to trying to recreate it. Now you know me. And you know this MUST be good. . Chickpea Caper & Panko Crunch (on Caesar Salad) This is ALL about the crunch. The salad is merely a very delicious vehicle that slows down my intense want to eat this crunch by the spoonful and probably choke myself. Thanks salad. You know how everyone looooves those crispy chickpeas that were a huge trend a while ago? I don’t like them. At. All. But! The idea of a healthy way to get major crunch was very intriguing to me, so I thought why don’t I blitz the chickpeas up and fry them until they get crispy and mix in a little panko to trick my mind completely. Success. This is sooooooo good!! . Recipe-ish: Blitz about 1/2 cup chickpeas and 1-2 Tbsp capers in a food processor until basically crumbs. Heat a couple Tbsp olive oil in a skillet and when it’s hot add in the chickpea mixture. Cook over medium high heat until the moisture evaporated and it gets lightly brown and crisp. Add in about 1/4 cup panko. Continue cooking for a couple minutes more. Remove to a bowl and season with S&P and red pepper flakes.
