Banana Almond Flour Cookies
Easy Banana Almond Flour Cookies with chocolate drizzle and banana crunch.

For the cookies:
- 3/4 cup mashed banana 2, very ripe
- 2 Tbsp roasted almond butter
- 1/4 cup coconut sugar
- 1 egg yolk
- 1 Tbsp avocado oil
- 1 tsp vanilla extract
- 3/4 tsp almond extract
- 2 1/2 cups almond flour
- 1/4 tsp sea salt
- 1/3 cup chocolate chips
For the drizzle:
- 2 Tbsp coconut oil
- 2 Tbsp chocolate chips
- 1 Tbsp cocoa powder
- 1 Tbsp maple syrup
- 2 drops almond extract
For the topping:
- 2-3 Tbsp dried banana chips coarsely crushed
Combine the banana, almond butter, coconut sugar, egg yolk, extracts and oil in a bowl. Mix well.
Add in the almond flour and salt. Mix until well combined.
Fold in the chocolate chips
Drop scoops onto a parchment lined baking sheet (I use my small scoop, which is about 1 1/2 Tbsp)
Flatten the balls into “cookie” shapes (the cookies don’t spread, so make them whatever shape you want them to end up in)
Bake at 350 degrees for about 15-20 minutes.
Remove and let cool.
To make the drizzle, add all ingredients to a bowl and microwave, stirring occasionally, until melted and smooth.
