Banana Almond Flour Cookies

Easy Banana Almond Flour Cookies with chocolate drizzle and banana crunch.

Ingredients
  

For the cookies:

  • 3/4 cup mashed banana 2, very ripe
  • 2 Tbsp roasted almond butter
  • 1/4 cup coconut sugar
  • 1 egg yolk
  • 1 Tbsp avocado oil
  • 1 tsp vanilla extract
  • 3/4 tsp almond extract
  • 2 1/2 cups almond flour
  • 1/4 tsp sea salt
  • 1/3 cup chocolate chips

For the drizzle:

  • 2 Tbsp coconut oil
  • 2 Tbsp chocolate chips
  • 1 Tbsp cocoa powder
  • 1 Tbsp maple syrup
  • 2 drops almond extract

For the topping:

  • 2-3 Tbsp dried banana chips coarsely crushed

Instructions
 

  • Combine the banana, almond butter, coconut sugar, egg yolk, extracts and oil in a bowl. Mix well.
  • Add in the almond flour and salt. Mix until well combined.
  • Fold in the chocolate chips
  • Drop scoops onto a parchment lined baking sheet (I use my small scoop, which is about 1 1/2 Tbsp)
  • Flatten the balls into “cookie” shapes (the cookies don’t spread, so make them whatever shape you want them to end up in)
  • Bake at 350 degrees for about 15-20 minutes.
  • Remove and let cool.

To make the drizzle, add all ingredients to a bowl and microwave, stirring occasionally, until melted and smooth.

  • Drizzle onto the cookies and immediately sprinkle with the crushed banana chips.
