Brown Butter Oatmeal Cookies
These Brown Butter Oatmeal Cookies are rich, chewy, and full of nutty, caramelized flavour. They have crisp edges, a soft, melt-in-your-mouth center and are topped with a sweet brown butter glaze.

For the cookies: 1/2 cup butter browned and cooled 1/2 cup light brown sugar packed 1/4 cup sugar 1 egg 2 tsp vanilla 1 1/2 cups rolled oats 3/4 cup flour 2 Tbsp dry milk powder 1/2 tsp baking soda 1/2 tsp salt 1/2 cup toffee bits optional For the glaze: 1/4 cup butter browned 1/4 tsp vanilla 1/2 cup powdered sugar 1-2 Tbsp milk to thin, if needed
Make the cookies: Combine the oats, flour, milk powder, salt and baking soda. Mix well and set aside.
In an electric mixer combine the butter with the sugar and the brown sugar. Mix well, for 2-3 minutes.
Add in the egg and the vanilla and mix well for several minutes, until very light and fluffy.
Add the dry ingredients to the butter mixture and mix until just combined.
Fold in the toffee bits, if using.
Drop scoops of dough onto a baking sheet (I use a 2 1/2 Tbsp cookie scoop).
Bake at 350 for 9-11 minutes.
Remove and allow to cool before drizzling on the glaze.
Make the glaze: Combine the browned butter, vanilla and powdered sugar in a small bowl.
Add in the powdered sugar and mix. Add milk to thin, if needed.
Drizzle on the cooled cookies.
