Cherry Chocolate Brownies
Rich, fudgy, chocolatey brownies absolutely loaded with chocolate and fresh, sweet cherries. A touch of Amaretto makes them extra special.

- 3/4 cup butter
- 1 1/3 cups sugar
- 3/4 cup cocoa powder
- 1/4 tsp salt
- 2 Tbsp Amaretto optional
- 1 egg
- 1 egg yolk
- 1 1/2 tsp vanilla
- 1/2 cup flour
- 3/4 cup chopped dark chocolate or chocolate chips
- 1 cup fresh cherries pitted and chopped into halves and quarters.
Preheat oven to 325 and line an 8-inch square baking pan. Spray with cooking spray.
Melt the butter in a medium saucepan over low heat. When the butter is melted, stir in the Amaretto, if using.
Whisk in the sugar. Continue whisking for about a minute until fully incorporated.
Whisk in the cocoa powder and a pinch of salt.
Remove saucepan from the heat and let cool slightly (5-10 minutes).
Whisk in egg and egg yolk until well combined.
Whisk in vanilla.
Add in the flour and fold in until just combined.
Fold in the cherries and the chocolate chips.
Spread the batter into the pan and smooth the top.
Bake for 30 minutes, until the top is set.
Cool completely before removing from the pan and cutting into squares.
