Cherry Chocolate Brownies

Rich, fudgy, chocolatey brownies absolutely loaded with chocolate and fresh, sweet cherries. A touch of Amaretto makes them extra special.

Ingredients
  

  • 3/4 cup butter
  • 1 1/3 cups sugar
  • 3/4 cup cocoa powder
  • 1/4 tsp salt
  • 2 Tbsp Amaretto optional
  • 1 egg
  • 1 egg yolk
  • 1 1/2 tsp vanilla
  • 1/2 cup flour
  • 3/4 cup chopped dark chocolate or chocolate chips
  • 1 cup fresh cherries pitted and chopped into halves and quarters.

Instructions
 

  • Preheat oven to 325 and line an 8-inch square baking pan. Spray with cooking spray.
  • Melt the butter in a medium saucepan over low heat. When the butter is melted, stir in the Amaretto, if using.
  • Whisk in the sugar. Continue whisking for about a minute until fully incorporated.
  • Whisk in the cocoa powder and a pinch of salt.
  • Remove saucepan from the heat and let cool slightly (5-10 minutes).
  • Whisk in egg and egg yolk until well combined.
  • Whisk in vanilla.
  • Add in the flour and fold in until just combined.
  • Fold in the cherries and the chocolate chips.
  • Spread the batter into the pan and smooth the top.
  • Bake for 30 minutes, until the top is set.
  • Cool completely before removing from the pan and cutting into squares.
