Chewy Dirty Chai Cookies with Espresso Glaze

These chewy dirty chai cookies are made with brown butter and warm chai spices, and finished with a simple espresso glaze for a little coffee kick. No chilling time… just really good cookies.

Ingredients
  

  • for the cookies:
  • 1 cup butter browned and not hot
  • 1/2 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 2 tsp vanilla
  • 2 cups flour
  • 2 Tbsp milk powder
  • 1 tsp sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cardamom
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/8 tsp freshly ground black pepper
  • for the espresso glaze:
  • 1/2 cup icing sugar
  • 1 tsp instant espresso powder
  • 1–2 Tbsp milk or cream
  • 1/2 tsp vanilla
  • pinch of salt

Instructions
 

  • Preheat the oven to 375°F.
  • In a medium bowl, whisk together the flour, milk powder, salt, baking powder, baking soda, cinnamon, ginger, cardamom, nutmeg, cloves and black pepper.
  • Combine the sugar, brown sugar and brown butter. Beat with an electric mixer until very light and fluffy.
  • Add the egg and vanilla and mix very well again.
  • Add the dry ingredients and mix just until combined.
  • Scoop the dough onto the baking sheets (I use a 2 Tbsp scoop)
  • Bake for 9–11 minutes.
  • Let the cookies cool on the baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  • make the espresso glaze
  • Whisk the icing sugar, espresso powder, vanilla and salt together. Add the milk or cream a little at a time, whisking until you have a smooth, drizzleable glaze.
  • Drizzle the glaze over the completely cooled cookies and let it set for a few minutes before serving.
