Chocolate Chip Marshmallow Cookies

Chewy chocolate chip cookies loaded with gooey marshmallows and buttery toffee bits.

Ingredients
  

  • 1 cup melted butter cooled
  • 1/2 cup sugar
  • 3/4 cup light brown sugar packed
  • 2 tsp vanilla
  • 1 egg
  • 2 cups flour
  • 2 Tbsp dry milk powder
  • 1 tsp sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 3/4 cup chocolate chips
  • 1 cup vegan or regular mini marshmallows**see note**
  • 1/2 cup toffee bits

Instructions
 

  • In an electric mixer combine the butter, sugar and brown sugar. Mix on medium speed for several minutes, until light and fluffy.
  • Add in the vanilla and the egg. Mix well.
  • In a separate bowl mix together the flour, milk powder, salt, baking powder and baking soda.
  • Add the flour mixture to the butter mixture and mix until just combined.
  • Fold in the chocolate chips, marshmallows and toffee bits.
  • Drop scoops of dough onto a baking sheet.
  • Bake at 375 for 9-11 minutes.

Notes

**if using regular marshmallows be sure to reserve some to add to the tops of the cookies as soon as they come out of the oven as the others may melt down and not be visible.
