Christmas Breakfast Cookies

The healthier way to eat cookies for breakfast!

Ingredients
  

  • 1 cup almond flour
  • 1/4 cup oat flour
  • 3 Tbsp coconut flour
  • 1/2 tsp baking soda
  • Pinch salt
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1/4 cup ricotta
  • 2 Tbsp cane sugar*
  • 1 egg
  • 1 tsp white vanilla
  • 1/2 tsp almond extract
  • 3 Tbsp sprinkles

Instructions
 

  • In a bowl whisk together the flours, baking soda and salt.
  • In a separate bowl whisk together the oil, syrup, ricotta, sugar, egg and extracts.
  • Add the flour mixture to the oil mixture and mix until combined.
  • Fold in 2 Tbsp sprinkles.
  • Roll into balls, flatten slightly and place on a baking sheet. Top with remaining sprinkles.
  • Bake at 350 for about 10 minutes.
  • Makes 10 cookies.

Notes

*optional, add if you want them a little sweeter
*these cookies are best fresh. They're still delicious the next day, and they freeze well, but they will be more soft and cakey.
