In a bowl whisk together the flours, baking soda and salt.
In a separate bowl whisk together the oil, syrup, ricotta, sugar, egg and extracts.
Add the flour mixture to the oil mixture and mix until combined.
Fold in 2 Tbsp sprinkles.
Roll into balls, flatten slightly and place on a baking sheet. Top with remaining sprinkles.
Bake at 350 for about 10 minutes.
Makes 10 cookies.
Notes
*optional, add if you want them a little sweeter *these cookies are best fresh. They're still delicious the next day, and they freeze well, but they will be more soft and cakey.
