Double Chocolate Zucchini Blender Muffins

These muffins are rich, fudgy, and secretly better for you. Made with Greek yogurt, oats, and plenty of zucchini, they’re naturally sweetened with maple syrup and loaded with melty chocolate chips. Quick to make in the blender and perfect for breakfast or a snack.

Ingredients
  

  • 3/4 cup plain greek yogurt
  • 2 eggs
  • 1/4 cup egg whites or another egg
  • 2/3 cup maple syrup
  • 1/2 cup olive oil
  • 2 small zucchini chopped
  • 2 tsp vanilla
  • 2 3/4 cups rolled oats
  • 1/3 cup flour
  • 1/2 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup chocolate chips

Instructions
 

  • Preheat the oven to 425 degrees.
  • In a blender combine the greek yogurt, eggs, egg whites, maple syrup, olive oil, zucchini and vanilla.
  • Blend until smooth.
  • Add in the oats, flour, cocoa powder, baking powder, baking soda and salt.
  • Blend again until smooth.
  • Fold in the chocolate chips.
  • Divide the batter into greased muffin cups.*
  • Place baking pan in the oven and reduce heat to 350 degrees.
  • Bake for 16-20 minutes.

Notes

*I get about 15 muffins with this recipe so once the muffin cups are full I divide the remaining batter into ramekins.
