Garlicky Fried Rice
A better than takeout fried rice that is packed with garlicky goodness. Easy to make, delicious and loaded with garlic.

For the garlic chips:
1/4
cup
neutral oil
2
cloves
garlic
very thinly sliced
For the rice:
3
Tbsp
Oil
3
garlic cloves
minced
4
cups
cooked rice
cold (I like short grain rice)

Tbsp
toasted sesame oil
2
Tbsp
soy sauce
2
Tbsp
butter
For serving:
Sliced Scallions
Garlic Chips
Instructions
Make the Garlic Chips:
Heat the oil over medium-high heat in a skillet.
When it’s hot, add in the sliced garlic.
Cook for about 4-5 minutes, tossing occasionally, until golden.
Drain on paper towel and sprinkle with salt. Set aside.
Make the rice:
Add the oil in a large nonstick skillet over medium heat and add in the garlic. Cook for 2 minutes.
Add in the rice, increase heat to med-high. Stir well.
Add in the sesame oil, soy sauce and butter. Season with salt and pepper.
Stir well and then allow to cook in a single layer for 2-3 minutes until the rice crisps up a little on the bottom. Stir.
Serve with sliced scallions, garlic chips and sesame seeds.
Notes
*Any type of rice will work... short grain, long grain, jasmine, basmati, brown.
