Garlicky Fried Rice

A better than takeout fried rice that is packed with garlicky goodness. Easy to make, delicious and loaded with garlic.

Ingredients
  

For the garlic chips:

  • 1/4 cup neutral oil
  • 2 cloves garlic very thinly sliced

For the rice:

  • 3 Tbsp Oil
  • 3 garlic cloves minced
  • 4 cups cooked rice cold (I like short grain rice)
  • 1 Tbsp toasted sesame oil
  • 2 Tbsp soy sauce
  • 2 Tbsp butter

For serving:

  • Sliced Scallions
  • Garlic Chips

Instructions
 

Make the Garlic Chips:

  • Heat the oil over medium-high heat in a skillet.
  • When it’s hot, add in the sliced garlic.
  • Cook for about 4-5 minutes, tossing occasionally, until golden.
  • Drain on paper towel and sprinkle with salt. Set aside.

Make the rice:

  • Add the oil in a large nonstick skillet over medium heat and add in the garlic. Cook for 2 minutes.
  • Add in the rice, increase heat to med-high. Stir well.
  • Add in the sesame oil, soy sauce and butter. Season with salt and pepper.
  • Stir well and then allow to cook in a single layer for 2-3 minutes until the rice crisps up a little on the bottom. Stir.

Serve with sliced scallions, garlic chips and sesame seeds.

    Notes

    *Any type of rice will work... short grain, long grain, jasmine, basmati, brown.
