Gnocchi with Pesto Sauce

Ingredients
  

  • 2 Tbsp butter
  • 2 garlic cloves minced
  • 1 1/2 cups vegetable broth or chicken
  • 1 package shelf stable gnocchi
  • 1/2 cup heavy cream
  • 1/3 cup pesto
  • 1/2 cup parmesan cheese finely grated
  • 2 Tbsp pine nuts toasted
  • Lemon for serving

Instructions
 

  • Melt the butter in a large skillet. Add in the garlic and cook for 1 minute.
  • Pour in the broth and when it’s hot add in the gnocchi. Allow to bubble for about a minute and add in the cream.
  • Simmer for 2-3 minutes until slightly thickened.
  • Add in the pesto and the parmesan. Season with S&P and stir well.
  • Serve with toasted pine nuts and a squeeze of lemon.
