Green Pea Gnocchi with Burrata
This creamy, bright, and bursting with flavour gnocchi dish is perfectly fresh and vibrant comfort food. Pillowy gnocchi is tossed in a smooth green pea and herb sauce, then topped with dreamy burrata and a drizzle of rich olive oil. Incredibly tasty, ready in under 30 minutes and perfect for a weeknight or a dinner party.

1 lb gnocchi 1 ball burrata 9 oz/250 grams 2 cups frozen sweet green peas 1/4 cup fresh parsley chopped 1/4 cup fresh mint chopped 2 Tbsp fresh lemon juice 2 Tbsp butter 2 Tbsp olive oil 2 galic cloves minced
Bring a large pot of well-salted water to a boil.
Add in the peas and boil for 2 minutes. Remove the peas with a slotted spoon and transfer to a blender
Add the gnocchi to the boiling water and cook for 2-3 minutes.
Remove with a slotted spoon and spread out on a paper towel lined baking sheet or plate.
To the blender, add 1/3 cup of the cooking water, the herbs, lemon juice, 1 tsp salt and a big pinch of black pepper.
Blend until completely smooth.
Heat the butter and olive oil in a large skillet and when it’s hot add in the garlic and the gnocchi.
Allow the gnocchi to get a little brown, turning once or twice.
Add in the pea sauce, mix well and let cook for 1-2 minutes.
Serve the gnocchi on a platter topped with the ball of burrata a drizzle of olive oil and several cracks of freshly ground black pepper.
