Halloumi Pasta

Halloumi Pasta with Brown Butter and Burst Tomatoes

Ingredients
  

  • 1/2 cup butter
  • 1 cup halloumi cheese grated
  • 16 oz pasta
  • 8 oz grape tomatoes
  • 3 Tbsp parsley chopped

Instructions
 

  • Cook the pasta in well salted water.
  • While the pasta cooks brown the butter and set aside.
  • Place the tomatoes on a baking sheet. Toss with a drizzle of olive oil and S&P. Roast at 450 for 10 minutes.*
  • Reserve about a cup of pasta water before draining.
  • Toss the cooked pasta with the browned butter and enough pasta cooking water to make a sauce.
  • Top the buttered pasta with the tomatoes, the grated halloumi and the parsley.

Notes

*Alternatively you can cook the tomatoes in a hot skillet until they “burst” and soften… about 5 minutes.
