Halloumi Pasta with Brown Butter and Burst Tomatoes

Ingredients

butter

cup
halloumi cheese
grated
16

pasta
8

grape tomatoes

parsley
chopped
Instructions
Cook the pasta in well salted water.
While the pasta cooks brown the butter and set aside.
Place the tomatoes on a baking sheet. Toss with a drizzle of olive oil and S&P. Roast at 450 for 10 minutes.*
Reserve about a cup of pasta water before draining.
Toss the cooked pasta with the browned butter and enough pasta cooking water to make a sauce.
Top the buttered pasta with the tomatoes, the grated halloumi and the parsley.
Notes
*Alternatively you can cook the tomatoes in a hot skillet until they “burst” and soften… about 5 minutes.
