Mix together honey, soy, garlic and balsamic. Set aside.
Season chops with S&P. Heat a 12” heavy skillet over med-high heat. When hot, add in the oil and sear the pork chops on both sides, two at a time. Remove to a plate.
Add the apples and the onion to the skillet and cook, stirring occasionally for 2-3 minutes.
Pour the wine into the skillet and let simmer for a minute or two until most of the liquid has evaporated.
Nestle the chops back into the pan with the onions and apples.
Pour the honey sauce into the skillet. Add in butter, the pepper and some fresh thyme and sage leaves, about 1 Tbsp each.
Bake at 400 for 10-15 minutes, depending on how thick your pork chops are. Serve.
Notes
*if you don't have fresh herbs you can use dried. Use 1/2 tsp each.**you can simply omit the wine if that's your preference.
