Kale Cucumber "Seaweed" Salad
A super tasty version of Wakame for my friends who are still on the fence about seaweed salad. This version is delicious.

- 2 Tbsp soy sauce
- 2 tsp rice vinegar
- 2 tsp mirin
- 1/2 tsp sugar
- 1 tsp fresh ginger finely grated
- 1/2 garlic clove minced
- 1 tsp toasted sesame oil
- 1 Tbsp avocado oil
- Pinch red pepper flakes
- 5 cups kale sliced into ribbons
- 1 baby cucumber julienned
- 1 Tbsp Furikake recipe here
To make the dressing whisk together the soy sauce, vinegar, mirin, sugar, ginger, garlic, sesame oil, avocado oil and red pepper flakes.
Combine the kale and cucumber in a bowl.
Toss with the dressing.
Add the Furikake and toss lightly.
