Oat Flour Pancakes with Ricotta and Vanilla
These pancakes are light and fluffy, filled with creamy ricotta, wholesome oat flour and lots of vanilla.

- 1 1/2 cups oat flour
- 1 Tbsp baking powder
- 1/4 tsp salt
- 2 Tbsp sugar
- 1 1/4 cups ricotta
- 3/4 cup buttermilk
- 3 eggs
- 2 tsp vanilla
Combine the oat flour, baking powder, salt and sugar in a bowl. Mix well.
In a separate bowl combine the ricotta, buttermilk, eggs and vanilla. Whisk well.
Add the flour mixture into the ricotta mixture and mix just until combined.
Let sit 15 minutes and then cook.
Makes 10-12 pancakes.
