Oat Flour Pancakes with Ricotta and Vanilla

These pancakes are light and fluffy, filled with creamy ricotta, wholesome oat flour and lots of vanilla.

Ingredients
  

  • 1 1/2 cups oat flour
  • 1 Tbsp baking powder
  • 1/4 tsp salt
  • 2 Tbsp sugar
  • 1 1/4 cups ricotta
  • 3/4 cup buttermilk
  • 3 eggs
  • 2 tsp vanilla

Instructions
 

  • Combine the oat flour, baking powder, salt and sugar in a bowl. Mix well.
  • In a separate bowl combine the ricotta, buttermilk, eggs and vanilla. Whisk well.
  • Add the flour mixture into the ricotta mixture and mix just until combined.
  • Let sit 15 minutes and then cook.
  • Makes 10-12 pancakes.
