Oatmeal Almond Flour Chocolate Chip Cookies

These are the best soft and chewy Oatmeal Almond Flour Chocolate Chip Cookies made with oats, almond flour, coconut sugar, a little protein powder and melty chocolate chips. Delicious, perfectly sweet cookies that are easy to make and perfect for snacks or dessert.

Ingredients
  

  • 1/2 cup butter soft
  • 1/2 cup coconut sugar
  • 1 egg
  • 2 tsp vanilla
  • 1 1/2 cups old-fashioned oats
  • 1 cup almond flour
  • 1/4 cup vanilla protein powder*
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup chocolate chips

Instructions
 

  • Heat the oven to 350 degrees.
  • Combine the butter and the coconut sugar in an electric mixer and mix for several minutes until light and fluffy.
  • Add in the egg and the vanilla and mix well again.
  • In a separate bowl combine the oats, almond flour, protein powder, baking soda and salt. Mix well.
  • Add the oat mixture to the butter mixture, along with the chocolate chips, and mix until just combined.
  • Scoop cookie dough onto a baking sheet and bake for 8-10 minutes.

Notes

*I use vanilla whey protein powder.
