Pumpkin Spice Latte Cookies
Chewy Snickerdoodle cookies with all the pumpkin spices and espresso powder. Your favourite pumpkin spice latte in cookie form.

- 1 1/2 cups flour
- 1 1/2 tsp pumpkin pie spice
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp instant espresso powder
- 1/2 cup soft butter
- 1/3 cup sugar
- 1/3 cup dark brown sugar
- 1 egg yolk
- 1 tsp vanilla
- 1/4 cup pumpkin purée
- 1 Tbsp dry milk powder
- 1 Tbsp sugar
- 1 Tbsp brown sugar
- 1/2 tsp pumpkin pie spice
- 1/2 tsp instant espresso powder
Combine the flour, pumpkin pie spice, baking soda, salt and espresso powder in a bowl, mix well and set aside.
Cream the butter and sugars in an electric mixer until light and fluffy.
Add in the egg yolk, vanilla, pumpkin and dry milk powder. Mix well again.
Add in the dry ingredients and mix until just combined.
In a bowl combine the 1 Tbsp sugar, 1 Tbsp brown sugar, 1/2 tsp pumpkin pie spice and 1/2 tsp espresso powder.
Roll the dough into golf ball sized balls and roll in the sugar mixture until completely coated.
Place on a baking sheet and bake at 350 for 9-11 minutes.
