Salted Caramel Apple Cookies

1 Granny Smith apple diced small 2 cups flour 2 Tbsp milk powder 1 tsp sea salt 1/2 tsp baking powder 1/4 tsp baking soda 1 cup melted butter cooled 1/2 cup cane sugar 3/4 cup packed dark brown sugar Mix well and add in: 2 tsp vanilla 1 egg 20 Caramels diced* Flaky salt
Preheat oven to 375
Prepare the apples:
Spread the diced apple pieces on a parchment lined baking sheet and put them in the oven for 10 minutes to slightly dry them out.
Remove from the oven and set aside.
Make the cookies:
În a medium bowl combine the flour, milk powder, salt, baking powder and baking soda. Mix well and set aside.
In the bowl of an electric mixer combine the butter, sugar and brown sugar.
Mix well - for several minutes - until very light and fluffy.
Add in dry ingredients and mix until just combined. Fold in the apple pieces and 3/4 of the caramel pieces.
Scoop the cookie dough onto the baking sheet.
Top each ball of dough with a couple of the remaining caramel pieces.
Bake for 9-11 minutes.
Remove from the oven and sprinkle with the flaky salt.
