Ingredients

  • 1 cup sugar
  • 1/4 cup corn syrup
  • 2 1/2 tsp baking soda
  • 1 cup chopped dark chocolate or chocolate chips

Instructions

  • Line a 9"x9" or 9"x13" pan with parchment and coat with nonstick spray. *See Note.
  • In a large heavy saucepan heat sugar and syrup over medium heat, stirring occasionally until the sugar melts. Then do NOT stir.
  • Let the mixture bubble until it reaches 300 degrees on a candy thermometer.
  • Remove from heat immediately and quickly whisk in the baking soda. It will increase in volume a huge amount.
  • Pour quickly into pan and let the pan sit, undisturbed for at least an hour to allow the candy to harden.
  • Remove the toffee from the pan and break into chunks.
  • Melt the chocolate in the microwave until completely melted, stirring occasionally.
  • Drizzle chocolate over the toffee pieces or dip them directly in the chocolate.

Notes

The mixture expands enormously, so if you're concerned about it overflowing use the 9"x13".
