Sponge Toffee Recipe
Sponge Toffee or Honeycomb Toffee is a super crunchy candy that is fun to eat and super tasty. It's even better covered in chocolate.

sugar
1/4
cup
corn syrup

baking soda

chopped dark chocolate or chocolate chips
Instructions
Line a 9"x9" or 9"x13" pan with parchment and coat with nonstick spray. *See Note.
In a large heavy saucepan heat sugar and syrup over medium heat, stirring occasionally until the sugar melts. Then do NOT stir.
Let the mixture bubble until it reaches 300 degrees on a candy thermometer.
Remove from heat immediately and quickly whisk in the baking soda. It will increase in volume a huge amount.
Pour quickly into pan and let the pan sit, undisturbed for at least an hour to allow the candy to harden.
Remove the toffee from the pan and break into chunks.
Melt the chocolate in the microwave until completely melted, stirring occasionally.
Drizzle chocolate over the toffee pieces or dip them directly in the chocolate.
Notes
The mixture expands enormously, so if you're concerned about it overflowing use the 9"x13".
