Strawberry White Chocolate Scones
Easy scones loaded with white chocolate and strawberries. Touched with a little oat flour and a sparkling sugar crust.

- 1 cup cake & pastry flour or all purpose
- 1/2 cup all-purpose flour
- 1/2 cup oat flour
- 2 Tbsp sugar
- 1 Tbsp baking powder
- 1/2 tsp salt
- 1/4 cup butter frozen
- 1 cup heavy cream
- 3/4 cup fresh strawberries diced
- 1/2 cup white chocolate chips
- Coarse sugar for sprinkling
Mix together all the flours, the baking powder and the salt.
Grate in 1/4 cup frozen butter. Mix.
Pour in the heavy cream and mix just until a rough dough forms (it will be crumbly and that’s ok).
Fold in the strawberries and white chocolate.
Turn out onto the counter, lightly knead to bring the dough together and pat into a circle.
Brush the top with a little cream and sprinkle with coarse sugar.
Cut into 8 wedges and bake on an ungreased baking sheet at 425 for 14-16 minutes.
