Strawberry White Chocolate Scones

Easy scones loaded with white chocolate and strawberries. Touched with a little oat flour and a sparkling sugar crust.

Ingredients
  

  • 1 cup cake & pastry flour or all purpose
  • 1/2 cup all-purpose flour
  • 1/2 cup oat flour
  • 2 Tbsp sugar
  • 1 Tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup butter frozen
  • 1 cup heavy cream
  • 3/4 cup fresh strawberries diced
  • 1/2 cup white chocolate chips
  • Coarse sugar for sprinkling

Instructions
 

  • Mix together all the flours, the baking powder and the salt.
  • Grate in 1/4 cup frozen butter. Mix.
  • Pour in the heavy cream and mix just until a rough dough forms (it will be crumbly and that’s ok).
  • Fold in the strawberries and white chocolate.
  • Turn out onto the counter, lightly knead to bring the dough together and pat into a circle.
  • Brush the top with a little cream and sprinkle with coarse sugar.
  • Cut into 8 wedges and bake on an ungreased baking sheet at 425 for 14-16 minutes.
