Warm Pearl Couscous Salad with Brown Butter and Sumac Dressing

For the salad:
- 3 cups baby spinach chopped
- 2 cups cooked pearl couscous
- 1/4 cup dried apricots chopped
- 1/4 cup sliced almonds toasted
- 1/3 cup red onion finely diced
For the Dressing:
- 1/4 cup browned butter
- Juice of 1/2 a lemon
- 1 tsp sumac
- 1 tsp Aleppo pepper
- 1 Tbsp honey
To finish:
- 1/4 cup parsley chopped
- 1/4 cup crumbled feta
Add the spinach to a large bowl and toss with the couscous, apricots, almonds, onion and a good pinch of salt.
Mix the dressing together, pour over the salad and mix well.
Top with the parsley and feta.
