Chickpea Caper & Panko Crunch (on Caesar Salad) This is ALL about the crunch. The salad is merely a very delicious vehicle that slows down my intense want to eat this crunch by the spoonful and probably choke myself. Thanks salad. You know how everyone looooves those crispy chickpeas that were a huge trend a while ago? I don’t like them. At. All. But! The idea of a healthy way to get major crunch was very intriguing to me, so I thought why don’t I blitz the chickpeas up and fry them until they get crispy and mix in a little panko to trick my mind completely. Success. This is sooooooo good!! . Recipe-ish: Blitz about 1/2 cup chickpeas and 1-2 Tbsp capers in a food processor until basically crumbs. Heat a couple Tbsp olive oil in a skillet and when it’s hot add in the chickpea mixture. Cook over medium high heat until the moisture evaporated and it gets lightly brown and crisp. Add in about 1/4 cup panko. Continue cooking for a couple minutes more. Remove to a bowl and season with S&P and red pepper flakes. Also I don’t know if you know this but anytime you add coffee into any baking it immediately becomes appropriate breakfast food. . Recipe-ish: Mix together: 1/2 cup butter, melted 1/2 cup pumpkin purée 1 cup brown sugar 1 egg 1 tsp vanilla Mix together: 1 1/4 cup flour 1/2 tsp baking soda 1/2 tsp salt 1 tsp pumpkin pie spice 2 tsp instant espresso powder Add dry to wet. Mix until just combined. Spread into an 8x8 pan and bake at 350 for about 30 minutes. Let cool.
