Take whatever small-ish tomatoes you can get your hands on, a whole whack of garlic cloves and an obscene amount of olive oil and cook slowly until it transforms into a a sweet, savoury, buttery dish of irresistible deliciousness. THEN pile it on top of ricotta smeared crostini and drizzle with spicy honey. Repeat forever.

Cranberry White Chocolate Scones
There are two things I do when I have leftover fresh cranberries…
1. Freeze them to add to cocktails and wine over the holidays because nothing is prettier AND they keep your drink cold AND you can probably even eat them afterward when they’re all boozy and yummy.
2. Bake. Fresh cranberries > dried cranberries in baking. They are tart and super tasty and they don’t make your baking goods all soggy.
This recipe is an adaptation of the popular fresh cranberry, orange & white chocolate scones from my website. Just leave out the clementine zest and sprinkle the tops with coarse sugar before baking instead of using the glaze.

I used my famous restraint and resisted adding in Pumpkin Spice so I could call it a Pumpkin Spice Salad because that seemed ridiculous but now I’m starting to that would be kind of genius and so follow me for the Pumpkin Spice salad that is inevitably coming soon. Quick and Easy Small Batch Pumpkin Cottage Cheese Blender Pancakes.
I would call these “protein” pancakes but I feel like all the protein people would come for me asking for grams and macros and other things that I have no idea about… and those protein people are strong! 😬
So, I’ll just stick with saying that they’re easy, probably pretty healthy and sooooo yummy.
This is a miniaturized version of the pancakes on my site, so go there and search pancakes if you want a bigger batch. For these ones…
Recipe-ish:
1/2 cup cottage cheese
1/2 cup pumpkin puree
3/4 cup rolled oats
2 eggs
1 Tbsp oil
1/2 tsp pumpkin pie spice
Splash vanilla
1/4 tsp baking soda
* 1/2 tsp baking powder
* Buttermilk/milk**
Chocolate chips
Chopped walnuts
Blend all except milk, chocolate and nuts. Add in some milk to thin if needed.
Str in chocolate and nuts or sprinkle toppings on batter when it’s on the griddle.
Makes about 6 pancakes.

Pumpkin Spice Muffins with Cream Cheese Filling & Pecan Streusel.
Do you see how I stopped before taking things just a bit too far? Like adding in some dark chocolate chips or a brown butter drizzle? It’s called restraint friends and once in a while I practice it.
These muffins are my current breakfast obsession. Are they healthy? Who am I to say really? They have a bit of oat flour in them and we all know pumpkin is chock full of some kind of vitamins. Let’s not over analyze things. We can have salad for lunch.
