Banana Bread with Oat Flour

- 4 very ripe bananas
- 1/2 cup melted butter
- 2 eggs
- 1 cup dark brown sugar
- 2 tsp vanilla
- 1 cup oat flour
- 1/2 cup flour whole wheat pastry or all purpose
- 1 Tbsp baking powder
- 1/2 tsp salt
- 3 tsp cinnamon divided
- 1/2 cup
- 1/2 cup chopped pecans*
- 2 Tbsp coarse sugar
- 2 Tbsp mini chocolate chips
In a large bowl mash the bananas.
Add in the butter, eggs, brown sugar and vanilla.
In a separate bowl mix together the flours, baking powder, salt and 2 tsp cinnamon. Mix well.
Add the flour mixture into the banana mixture and mix just until combined.
Fold in the chocolate chips and the pecans.
Pour the batter into a greased and/or lined 8x8 baking pan.
Mix together the coarse sugar and 1 tsp cinnamon. Sprinkle evenly over the batter.
Sprinkle the mini chocolate chips over the batter.
Bake at 350 for about 50 minutes.
