Brown Butter & Bourbon Impossible Pie

Rich, creamy, coconut custard pie that whips up in the blender in minutes. An old school recipe elevated with decadent brown butter and warm bourbon. It’s impossibly delicious.

Ingredients
  

  • 2 cups milk less 2 Tbsp*
  • 2 Tbsp bourbon
  • 1 cup unsweetened shredded coconut
  • 4 eggs
  • 2 tsp vanilla bean paste or extract
  • 1/2 cup flour
  • 1/2 cup butter browned and cooled**
  • 3/4 cup sugar
  • 1/4 tsp nutmeg
  • Pinch salt

Instructions
 

  • Heat the oven to 350 degrees.
  • Add all ingredients to the blender and blend until smooth.
  • Pour the mixture into a buttered, 9” deep, pie plate.
  • Bake for 50-60 minutes until a toothpick inserted comes out clean.
  • Allow to cool to warm before serving, preferably with whipped cream.

Notes

*measure out 2 cups of milk and remove 2 Tbsp of it
**you want the brown butter cooled, but still melted
