Bubble Tea Pudding - with Chia and Salted Foam
Brown Sugar Bubble Tea Chia Pudding with Salted Foam is the healthier answer to your bubble tea cravings. Like your favourite milk tea, but with chia!

- 1 cup milk of choice
- 1 tsp black tea leaves
- 2 Tbsp dark brown sugar
- 1/2 tsp vanilla
- Pinch salt
- 1/4 cup chia seeds
- 1/4 cup whipping cream
- pinch salt
- 1 tsp brown sugar
Heat milk in a small saucepan and when it’s hot turn off the heat and stir in the tea leaves. Let steep 5 minutes then strain.
Stir the brown sugar, vanilla and salt into the hot milk.
Cool in the fridge for 15 minutes.
Stir in the chia seeds.
Pour into 2 glasses. Refrigerate until set. (About 3 hours)
To make the salted foam whisk the cream with the salt and brown sugar. Whip to soft peaks.
Pour on top of the pudding.
