Carrot Pineapple Salad

This is not your Grandma’s Carrot Pineapple Salad… but your Grandma would love it!

Ingredients
  

For the salad:

  • 2 cups shredded/julienned carrots
  • 1 cup fresh pineapple cut into small pieces
  • 1/4 cup feta cheese crumbled
  • 3 Tbsp dried cranberries or raisins
  • 3 Tbsp roasted salted pistachios chopped
  • 2 Tbsp chopped fresh mint

For the dressing:

  • 2 Tbsp olive oil
  • 2 Tbsp lemon juice
  • 1 tsp lemon zest
  • 2 tsp honey
  • Pinch cayenne pepper

Instructions
 

  • Combine the carrots, pineapple, feta, cranberries, pistachios and mint in a bowl.
  • In a separate bowl combine the olive oil, lemon juice, lemon zest, honey, cayenne and good pinch each of salt and pepper. Whisk well.
  • Pour the dressing over the salad and toss well.
