Carrot Pineapple Salad
This is not your Grandma’s Carrot Pineapple Salad… but your Grandma would love it!

For the salad:
- 2 cups shredded/julienned carrots
- 1 cup fresh pineapple cut into small pieces
- 1/4 cup feta cheese crumbled
- 3 Tbsp dried cranberries or raisins
- 3 Tbsp roasted salted pistachios chopped
- 2 Tbsp chopped fresh mint
For the dressing:
- 2 Tbsp olive oil
- 2 Tbsp lemon juice
- 1 tsp lemon zest
- 2 tsp honey
- Pinch cayenne pepper
Combine the carrots, pineapple, feta, cranberries, pistachios and mint in a bowl.
In a separate bowl combine the olive oil, lemon juice, lemon zest, honey, cayenne and good pinch each of salt and pepper. Whisk well.
Pour the dressing over the salad and toss well.
