Cheesecake Oreo Brownies

Rich, fudgy brownies layered with creamy vanilla cheesecake and scattered with loads of Oreo cookies. Easy to make and so good.

Ingredients
  

For the Brownie batter:

  • 1/2 cup melted butter
  • 1 Tbsp oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 tsp vanilla
  • 1/2 cup flour
  • 1/2 cup cocoa powder
  • 1/4 tsp salt
  • Oreos chopped about 14 cookies

For the Cheesecake layer:

  • 1 cup 8 oz cream cheese room temperature
  • 1/4 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • Pinch salt

Instructions
 

Make the brownies:

  • Whisk together the melted butter, oil, sugar and brown sugar until smooth.
  • Add in the eggs and the vanilla and whisk well.
  • In a separate bowl combine the flour, cocoa powder and the salt. Mix well.
  • Add the flour mixture to the butter mixture and mix until just combined.

Make the cheesecake:

  • Mix the cream cheese in an electric mixer until smooth and fluffy.
  • Add in the sugar and mix well.
  • Add in the egg, vanilla and salt and mix well.

Assemble and bake:

  • Spread the brownie batter into and 8x8” greased or lined pan, reserving about 1/4 of the batter.
  • Evenly drop about half of the chopped Oreos on top of the brownie batter.
  • Spread the cheesecake layer over the Oreos.
  • Drop spoonfuls of the remaining batter over the cheesecake layer and swirl with a knife.
  • Scatter the remaining Oreos over the top.
  • Bake at 350 degrees for 40-45 minutes
