Chocolate Baked Oats with Espresso and Ricotta
5 Minute Baked Oats for one. Option to "bake" in the microwave or the oven, these chocolatey oats are so delicious and just like having dessert for breakfast!

1/2 cup ricotta 1/4 cup milk 1 egg 2 Tbsp coconut sugar 2 Tbsp cacao or cocoa powder 1/2 tsp vanilla 1 tsp instant espresso powder 1/2 tsp baking powder 1/2 cup rolled oats Pinch salt 1/4 cup dark chocolate chunks
Combine everything except the chocolate chunks in the blender.
Blend until smooth.
Fold in the chocolate chunks by hand.
Pour into 2 buttered ramekins.
Microwave for 2-2 1/2 minutes or bake in the oven at 350 for 15-20 minutes.
Serve with thick Greek yogurt.
