Chocolate Baked Oats are the Secret to getting away with eating dessert for breakfast.
Just a little secret I thought I’d share. You’re welcome.
I’ll also share a few tricks at play that make this extra decadent…
I like to take the oats and blend them up because you know that that does? It makes this feel pretty much like cake. And I looooooooove cake. Then I add in some ricotta cheese for protein and richness. After that you must know that I really like breakfasts that include built-in coffee so I add instant espresso powder. Good place to stop? Nah. Let’s throw in some big chocolate chunks that get all gooey, melty… but dark chocolate though… keeping it healthy.
Finally friends, I like to top this off with thick, full-fat greek yogurt because it’s always in my fridge and it’s really delicious. It kinda makes this feel like cake and ice cream. Kinda. If you’re willing to fo the extra mile though, might I suggest whipped coconut cream? Or even a big scoop of n’ice cream?? And then, if you’re really feeling it I recommend a few chocolate shavings just because why stop now?
See? Dessert for breakfast.

Anything Special You Need to Know?
*If you don’t have ricotta cheese you can sub in cottage cheese. Once it’s blended you won’t know the difference.
*You can sub in chocolate chips instead of the chunks. White chocolate chips are really good in this too.
*You can leave out the espresso powder if you’re not a coffee person. Then we should have a chat about why you’re not a coffee person and what I can do to convince you otherwise.
*I use my Vitamix blender for this. This is NOT an ad, I just love that thing.
Recipe-ish…

Chocolate Baked Oats with Espresso and Ricotta
Ingredients
- 1/2 cup ricotta
- 1/4 cup milk
- 1 egg
- 2 Tbsp coconut sugar
- 2 Tbsp cacao or cocoa powder
- 1/2 tsp vanilla
- 1 tsp instant espresso powder
- 1/2 tsp baking powder
- 1/2 cup rolled oats
- Pinch salt
- 1/4 cup dark chocolate chunks
Instructions
- Combine everything except the chocolate chunks in the blender.
- Blend until smooth.
- Fold in the chocolate chunks by hand.
- Pour into 2 buttered ramekins.
- Microwave for 2-2 1/2 minutes or bake in the oven at 350 for 15-20 minutes.
- Serve with thick Greek yogurt.
