… And Ricotta… And Marinara… And Roasted Garlic!
This Lasagna with No Boil Noodles might just be the easiest lasagna you’ll ever make, but let me ask you…
What kind of mood are you in today friend? The type of mood where you feel like whipping up a big old dish of comfort food that takes all of 10 minutes to throw together and tastes like absolute heaven? Or… do you feel like taking that 10 minutes up to 20 and making a big old dish of slightly fancier comfort food that also tastes like absolute heaven? You go with how you feel… I just don’t see how you could go wrong here. I’ll explain.
This is a vegetarian lasagna, but if you want to add in some extra protein I like to cook up some crumbled spicy Italian sausage and add it in… or shredded cooked chicken… or a can of cannellini beans.
You could also add in some fresh baby spinach… or artichokes… or garlicky roasted mushrooms…
Ooooooo… or how about some spicy Calabrian Chili Paste? or Red Pepper Flakes?
I really could go on all day.
Suffice it to say, this lasagna is perfect just as it is, but if you need to use it as an opportunity to explore your culinary creativity, be my guest, friend. And then come tell me all about it.

Anything Special You Need to Know?
*You can use store-bought marinara for this to make the whole thing as easy as possible, or you can use homemade, or even better, what I did was just blend up some of my slow roasted tomatoes with garlic and onion and it was divine.
*If you don’t want to make roasted garlic just omit it from the recipe. It really does add a lovely flavour, but this lasagna is delicious even without it. If you never roast garlic you should definitely try… it’s super easy and freezes really well. Read this.
Recipe-ish…

Lasagna – No Boil Noodles and Roasted Garlic
Ingredients
- 3 cups marinara sauce*
- 2 cups ricotta cheese
- 1/4 cup chopped sun-dried tomatoes
- 1 egg.
- 1/4 cup mashed roasted garlic optional**
- 4 cups grated mozzarella.
- 1 box oven ready lasagna noodles
Instructions
- To a bowl add the ricotta, sun-dried tomatoes and roasted garlic, if using.
- Add in a big pinch each S&P and mix well. Set aside.
- Grease or spray a 9×13” baking dish and start building your lasagna by layering in this order:
- Sauce, Noodles, Ricotta, Mozzarella.
- Repeat twice.
- Cover with foil and bake at 375 for 45 minutes.
- Uncover and bake another 10 minutes.
Notes
**The roasted garlic just add another level of flavour, but it’s not necessary. If you have some, definitely add it, but it’s great without too.
