Lasagna - No Boil Noodles and Roasted Garlic

This lasagna with no boil noodles is probably the world's easiest lasagna. Takes just minutes to throw together, but the results are fantastic. It's simple and super delicious.

Ingredients
  

  • 3 cups marinara sauce*
  • 2 cups ricotta cheese
  • 1/4 cup chopped sun-dried tomatoes
  • 1 egg.
  • 1/4 cup mashed roasted garlic optional**
  • 4 cups grated mozzarella.
  • 1 box oven ready lasagna noodles

Instructions
 

  • To a bowl add the ricotta, sun-dried tomatoes and roasted garlic, if using.
  • Add in a big pinch each S&P and mix well. Set aside.
  • Grease or spray a 9x13” baking dish and start building your lasagna by layering in this order:
  • Sauce, Noodles, Ricotta, Mozzarella.
  • Repeat twice.
  • Cover with foil and bake at 375 for 45 minutes.
  • Uncover and bake another 10 minutes.

*I just blended up some of my slow roasted tomatoes - click here to see my “Balsamic Roasted Tomatoes” recipe.
**The roasted garlic just add another level of flavour, but it’s not necessary. If you have some, definitely add it, but it’s great without too.
