Creamy Roasted Tomato Soup

This Creamy Roasted Tomato Soup with Basil is super flavourful and incredibly easy to make. Fresh tomatoes roasted with onion and garlic is finished with rich cream and fresh basil. Ready in about 45 minutes, it’s heavenly.

Ingredients
  

  • 5 cups fresh tomatoes roughly chopped
  • 1 white onion chopped
  • 4 garlic cloves chopped
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sugar
  • Pinch red pepper flakes
  • 1/4 cup Olive oil
  • 3/4 cup heavy cream
  • 1/2 cup fresh basil chopped

Instructions
 

  • In a baking dish combine the tomatoes, onion, garlic, salt, pepper, sugar, red pepper flakes and olive oil. Toss well.
  • Roast at 425 degrees for 30-40 minutes.
  • Add the tomato mixture to the blender and puree. Pour into a soup pot along with the heavy cream and the basil.
  • Heat through over low-medium heat. Season with more S&P if necessary.
