A giant gooey, chewy skillet peanut butter cookie topped with creamy marshmallow fluff and extra peanut butter. It’s insanely good and such an easy dessert to make.
In an electric mixer cream the butter and sugars for several minutes until light and fluffy. Add in the peanut butter, egg and vanilla and mix well again.
In a separate bowl mix together the flour, baking soda, baking powder and salt.
Add the flour mixture to the butter mixture and mix until just combined. Fold in the peanut butter chips.
Press half the dough into a generously buttered cast iron skillet.
Spread the marshmallow fluff as evenly as you can over the dough and then dollop the peanut butter on top of the fluff.
Drop spoonfuls of the remaining dough on top of the peanut butter.
