Giant Skillet Fluffernutter Cookie

Warm. Gooey. Chewy. Peanut Buttery. Insanely good.

This Giant Skillet Fluffernutter Cookie is a representation of my current obsession with marshmallow fluff and how it might be bordering on becoming a bit of a problem. Now, I’m ok with this and maybe that’s denial, but here we are. And it’s a good place to be. A gigantic warm, gooey, chewy peanut butter cookie loaded with peanut butter chips, extra peanut butter and big globs of melty marshmallow fluff.

Friends, this “problem” of mine all started with my desire to create Rice Krispie Treats for my vegetarian daughter. Because I wanted Rice Krispie Treats, yes, true, but I wanted to make sure others were going to help me eat them. So, I made these Marshmallow Fluff Rice Krispie Treats with brown butter and many jars of marshmallow fluff later I may have a new favourite fluff recipe with this Fluffernutter Cookie.

I’d honestly never even heard of Fluffernutter until recently, when I was reading the label on my beloved jar of marshmallow fluff. I still haven’t tried the real deal, but I’m pretty happy with this version of it for now and I know you’re going to be happy too because omg is it ever good.

Giant Skillet Fluffernutter Cookie, how to make it…

Step 1: Make the peanut butter cookie dough by creaming butter, sugar and brown sugar until light and fluffy. Add in some peanut butter, egg & vanilla and mix well. Add in the dry ingredients and fold in some peanut butter chips (to make it extra peanut buttery).

Step 2: Press half of that cookie dough into a well-buttered cast iron skillet. Spread marshmallow fluff evenly over the dough and then spread peanut butter over that. Drop the rest of the cookie dough on top of the cookie. See pictures above.

Step 3 and Step 4: Bake. Eat. (maybe let it cool for a minute or two first because I can tell you from personal experience that straight from skillet to mouth is not the best life choice)

Giant Skillet Fluffernutter Cookie Recipe ingredients, tips, substitutions:

Skillet – I use a 10″ cast iron skillet.

Peanut Butter – regular, creamy peanut butter.

Flour – regular all purpose flour, but sometimes I sub in bread flour.

Peanut Butter Chips – you can leave these out if you don’t have them.

Fluffernutter Cookie Recipe Variations:

  • Sub in chocolate chips for the peanut butter chips and sprinkle a handful on top of the peanut butter for a chocolatey version
  • Make the same chocolate substitution and then add in some crushed graham wafers for a pb s’mores skillet cookie.
  • Make it sweet & salty by adding some chopped pretzels on top with the cookie dough.
  • Use M&Ms or Reese’s Pieces instead of the peanut butter chips and sprinkle a few extra on top.

Giant Skillet Fluffernutter Cookie

A giant gooey, chewy skillet peanut butter cookie topped with creamy marshmallow fluff and extra peanut butter. It’s insanely good and such an easy dessert to make.

Ingredients
  

  • 1/2 cup butter
  • 3/4 cup brown sugar
  • 1/4 cup sugar
  • 1/2 cup peanut butter
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup peanut butter chips
  • 1 cup marshmallow fluff
  • 1/3 cup peanut butter

Instructions
 

  • In an electric mixer cream the butter and sugars for several minutes until light and fluffy. Add in the peanut butter, egg and vanilla and mix well again.
  • In a separate bowl mix together the flour, baking soda, baking powder and salt.
  • Add the flour mixture to the butter mixture and mix until just combined. Fold in the peanut butter chips.
  • Press half the dough into a generously buttered cast iron skillet.
  • Spread the marshmallow fluff as evenly as you can over the dough and then dollop the peanut butter on top of the fluff.
  • Drop spoonfuls of the remaining dough on top of the peanut butter.
  • Bake at 350 for 25-30 minutes.
