Ground Pork Meatballs

Ingredients
  

For the sauce:

  • 1/2 cup peanut butter
  • 2 Tbsp ginger
  • 1 garlic clove
  • 2 Tbsp soy sauce
  • 1 Tbsp lime juice
  • 2 Tsp rice vinegar
  • 1 Tbsp sriracha
  • 1/2 tsp salt
  • 3 Tbsp honey
  • 1/2 tsp sesame oil
  • 1 can coconut milk

For the meatballs:

  • 1 lb ground pork
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1 clove garlic
  • 2 green onions finely chopped
  • 1 Tbsp soy sauce
  • 1/2 tsp black pepper

For serving:

  • Fresh cilantro chopped
  • Peanuts
  • Green onions sliced

Instructions
 

Make the sauce:

  • In a blender combine the peanut butter, ginger, garlic, soy sauce, lime juice, vinegar, sriracha, salt, honey, sesame oil and coconut milk.
  • Blend until completely smooth.
  • Set aside.

Make the meatballs:

  • In a large bowl combine the ground pork, egg, breadcrumbs, garlic, green onion, soy sauce and pepper.
  • Mix with a spoon or your hands and form into tablespoon sized balls.
  • Heat a drizzle of neutral oil to a heavy skillet and when it’s hot add in the meatballs (in batches if necessary, to not crowd the pan)
  • Sear the meatballs on all sides and then add in the sauce.
  • Simmer for about 10 minutes, until the meatballs are cooked through.
  • Top with cilantro, peanuts and green onions.
