Ground Pork Meatballs

For the sauce:
- 1/2 cup peanut butter
- 2 Tbsp ginger
- 1 garlic clove
- 2 Tbsp soy sauce
- 1 Tbsp lime juice
- 2 Tsp rice vinegar
- 1 Tbsp sriracha
- 1/2 tsp salt
- 3 Tbsp honey
- 1/2 tsp sesame oil
- 1 can coconut milk
For the meatballs:
- 1 lb ground pork
- 1 egg
- 1/4 cup breadcrumbs
- 1 clove garlic
- 2 green onions finely chopped
- 1 Tbsp soy sauce
- 1/2 tsp black pepper
For serving:
- Fresh cilantro chopped
- Peanuts
- Green onions sliced
Make the sauce:
In a blender combine the peanut butter, ginger, garlic, soy sauce, lime juice, vinegar, sriracha, salt, honey, sesame oil and coconut milk.
Blend until completely smooth.
Set aside.
Make the meatballs:
In a large bowl combine the ground pork, egg, breadcrumbs, garlic, green onion, soy sauce and pepper.
Mix with a spoon or your hands and form into tablespoon sized balls.
Heat a drizzle of neutral oil to a heavy skillet and when it’s hot add in the meatballs (in batches if necessary, to not crowd the pan)
Sear the meatballs on all sides and then add in the sauce.
Simmer for about 10 minutes, until the meatballs are cooked through.
Top with cilantro, peanuts and green onions.
