Making these Ground Pork Meatballs With Coconut Peanut Sauce requires little more than a blender, a skillet and less than 30 minutes of your time. Flavourful and juicy pork meatballs are browned and caramelized in a skillet and drenched bathed in a ridiculously easy and tasty creamy coconut peanut sauce. Topped with crunchy peanuts, bright cilantro and fresh green onion, they are so darn good.

May I suggest you put on some rice and slice up some cucumbers to serve alongside so you can transform these sub 30 minute meatballs into a sub 30 minute meal? That’s how we like to eat them.

You can take just about any dish and turn it into meatballs… chicken parm meatballs, sweet and sour meatballs, marsala meatballs… you can use just about any protein… beef, pork, chicken turkey, Italian sausage, tofu, beans… AND you can cook them using just about any method… pan fried, dropped in sauce, slow cooked, baked on a rimmed baking sheet. I ask you friends, what can’t we do with meatballs? A true dinner super hero, they are.

Ingredients
  

For the sauce:

  • 1/2 cup peanut butter
  • 2 Tbsp ginger
  • 1 garlic clove
  • 2 Tbsp soy sauce
  • 1 Tbsp lime juice
  • 2 Tsp rice vinegar
  • 1 Tbsp sriracha
  • 1/2 tsp salt
  • 3 Tbsp honey
  • 1/2 tsp sesame oil
  • 1 can coconut milk

For the meatballs:

  • 1 lb ground pork
  • 1 egg
  • 1/4 cup breadcrumbs
  • 1 clove garlic
  • 2 green onions finely chopped
  • 1 Tbsp soy sauce
  • 1/2 tsp black pepper

For serving:

  • Fresh cilantro chopped
  • Peanuts
  • Green onions sliced

Instructions
 

Make the sauce:

  • In a blender combine the peanut butter, ginger, garlic, soy sauce, lime juice, vinegar, sriracha, salt, honey, sesame oil and coconut milk.
  • Blend until completely smooth.
  • Set aside.

Make the meatballs:

  • In a large bowl combine the ground pork, egg, breadcrumbs, garlic, green onion, soy sauce and pepper.
  • Mix with a spoon or your hands and form into tablespoon sized balls.
  • Heat a drizzle of neutral oil to a heavy skillet and when it’s hot add in the meatballs (in batches if necessary, to not crowd the pan)
  • Sear the meatballs on all sides and then add in the sauce.
  • Simmer for about 10 minutes, until the meatballs are cooked through.
  • Top with cilantro, peanuts and green onions.

Ground Pork Meatballs With Coconut Peanut Sauce Recipe ingredients, tips, substitutions:

Peanut Butter – regular creamy peanut butter.

Coconut Milk – canned, full-fat coconut milk.

Breadcrumbs – I often use Panko because it’s always in my pantry.

Skillet – I use my heavy, 12″ cast iron skillet so I can cook all the meatballs in one batch. If you use a smaller one you may have to sear the meatballs in a couple of batches.

Baked Version – instead of simmering on the stovetop, bake the meatballs in the oven for about 20 minutes at 350 degrees after you add in the sauce.

Spicy Version – add 1/2-1 tsp red pepper flakes to the sauce before you blend and serve more alongside the finished meatballs.

I make the sauce first so it’s ready to go when I’ve finished searing the meatballs. Just add all the sauce ingredients to the blender and mix until completely smooth. Set the sauce aside while you make the meatballs.

Add all the meatball ingredients to a large bowl and gently mix until well combined. Form the mixture into tablespoon sized balls and set on a plate while you prepare the skillet.

Add a slick of oil to a heavy cast-iron skillet and heat over medium-high heat. When it’s hot add in the meatballs (in batches if necessary – don’t overcrowd the pan) and toss them around every so often until they’re well browned on all sides. Pour in the sauce and bring it to a simmer. Reduce the heat and simmer for 10 minutes or so until the meatballs are cooked through.

Sprinkle with cilantro, green onion and chopped peanuts (spicy ones if you have ’em).
