Peanut Butter and Fudge Stuffed Blondies

Crackly, sweet, fudgy blondies stuffed with creamy peanut butter and rich chocolate fudge.

Ingredients
  

For the fudge:

  • 6 Tbsp cocoa powder
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 2/3 cup evaporated milk 1 small can
  • Pinch salt
  • 1 tsp vanilla

For the blondies:

  • 3/4 cup butter melted, not hot
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 1/3 cup flour
  • 3/4 tsp salt
  • 1/3 cup fudge
  • 1/3 cup creamy peanut butter

Instructions
 

Make the fudge:

  • To make the fudge place a medium saucepan over medium heat and add in the cocoa, butter, powdered sugar, evaporated milk and salt.
  • Stir well, bring to a boil, reduce the heat and let simmer for about 10 minutes.
  • Remove from heat and stir in the vanilla.
  • Refrigerate for several hours or overnight, until firm.

Make the brownies:

  • In a large bowl combine the butter and sugars and mix well.
  • Add in the eggs and vanilla and mix well.
  • Mix together the flour and salt and add. Mix until just combined.
  • Spread half the batter into an 8” x 8” greased or lined pan.
  • Dollop with spoonfuls of the peanut butter and fudge.
  • Spread remaining batter on top.
  • Bake at 350 for about 30-35 minutes.
  • Allow to cool before eating so bars firm up.
