These Peanut Butter and Fudge Stuffed Blondies are all about the crackly top for me. Wait. It’s the combo of peanut butter and chocolate. Wait. It’s the super duper ooey gooeyness that is so fresh baked cookies straight out of the oven vibes. Yes yes, that’s definitely it. Wait…

Picture it friends… buttery, rich blondies with chewy centres and crisp edges layered with rich chocolate fudge and creamy peanut butter. I think you knnow what you need to do right now.

Blondies and brownies are interchangeable in my mind when weighing dessert making options in terms of: ease of making, adaptability to change, textural satisfaction (hi crispy, chewy, gooey) and flavour.

Once I’ve decided if I’m feeling chocolately or not so chocolately all I have to figure out is what I’m going to add in to these super resilient bars of deliciousness. The options are literally endless and sometimes, for me, bordering on ridiculous (are jalapeños in blondies really a good idea, Joni? really?).

The point is you can not (almost) screw them up.

Ingredients
  

For the fudge:

  • 6 Tbsp cocoa powder
  • 1/2 cup butter
  • 2 cups powdered sugar
  • 2/3 cup evaporated milk 1 small can
  • Pinch salt
  • 1 tsp vanilla

For the blondies:

  • 3/4 cup butter melted, not hot
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1 1/3 cup flour
  • 3/4 tsp salt
  • 1/3 cup fudge
  • 1/3 cup creamy peanut butter

Instructions
 

Make the fudge:

  • To make the fudge place a medium saucepan over medium heat and add in the cocoa, butter, powdered sugar, evaporated milk and salt.
  • Stir well, bring to a boil, reduce the heat and let simmer for about 10 minutes.
  • Remove from heat and stir in the vanilla.
  • Refrigerate for several hours or overnight, until firm.

Make the brownies:

  • In a large bowl combine the butter and sugars and mix well.
  • Add in the eggs and vanilla and mix well.
  • Mix together the flour and salt and add. Mix until just combined.
  • Spread half the batter into an 8” x 8” greased or lined pan.
  • Dollop with spoonfuls of the peanut butter and fudge.
  • Spread remaining batter on top.
  • Bake at 350 for about 30-35 minutes.
  • Allow to cool before eating so bars firm up.

Peanut Butter and Fudge Stuffed Blondies Recipe ingredients, tips, substitutions:

Butter – melted but cooled so it’s no longer lava hot.

Sugar – both white and brown are used here.

Fudge – making your own fudge sauce is so worth the effort here.

Peanut Butter – regular old creamy peanut butter, not the “natural” type that my kids say tastes like glue.

Blondies with Peanut Butter and Fudge Recipe Variations:

Honey Roasted Peanut Version – chop up about 1/2 cup honey roasted peanuts. Sprinkle half in with the dollops and half on top.

Espresso Version – add 2 tsp instant espresso powder in with the sugars.

Peanut Butter Chocolate Chip Version – replace the fudge with more peanut butter and stir 1/2 cup chocolate chips into the blondie batter along with the flour. Sprinkle a few on top as well.

While there is the added step of making the homemade fudge sauce here you can certainly lessen your load by making that days ahead of time. It makes way more than you need and it’s something that almost always lives in my fridge for my emergency sundae needs.

To make the blondies you’ll mix together some melted butter and two kinds of sugar. White, for it’s crackly-ness and brown for it’s chewy-ness. Not all sugars are created equal. Then you’ll mix in some eggs & vanilla followed by some flour and salt.

Half of this batter gets spread into your baking dish and then dolloped with peanut butter and fudge. The remaining batter gets spread over your dollops and you bake. Then you eat. That is all.
