Rice Krispie Treat Cookies
Super chewy cookies loaded with extra vanilla, crispy cereal and gooey marshmallows. The key here is the vegan marshmallows - they don’t melt as easily.

2 cups flour 2 Tbsp milk powder 1 1/4 tsp sea salt 1/2 tsp baking powder 1/4 tsp baking soda 1 cup melted butter cooled 1/2 cup sugar 3/4 cup packed light brown sugar 1 Tbsp vanilla 1 egg 2 cups Rice Krispies plus extra for topping 1 heaped cup vegan mini marshmallows plus extra for topping
In an electric mixer combine the butter, sugar and brown sugar. Mix until very light and fluffy (5+ minutes)
Add in the vanilla and the egg. Mix well.
In a separate bowl mix together the flour, milk powder, salt, baking powder and baking soda.
Add the flour mixture to the butter mixture and mix until just combined.
Fold in the Rice Krispies and the marshmallows.
Drop scoops of dough onto a baking sheet (I use my medium scoop, about 2 1/2 Tbsp).
Dip the dough balls into extra Rice Krispies and top with a couple of extra marshmallows, if desired.
Bake at 375 for 9-11 minutes.
