Rice Krispie Treat Cookies

Super chewy cookies loaded with extra vanilla, crispy cereal and gooey marshmallows. The key here is the vegan marshmallows - they don’t melt as easily.

Ingredients
  

  • 2 cups flour
  • 2 Tbsp milk powder
  • 1 1/4 tsp sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup melted butter cooled
  • 1/2 cup sugar
  • 3/4 cup packed light brown sugar
  • 1 Tbsp vanilla
  • 1 egg
  • 2 cups Rice Krispies plus extra for topping
  • 1 heaped cup vegan mini marshmallows plus extra for topping

Instructions
 

  • In an electric mixer combine the butter, sugar and brown sugar. Mix until very light and fluffy (5+ minutes)
  • Add in the vanilla and the egg. Mix well.
  • In a separate bowl mix together the flour, milk powder, salt, baking powder and baking soda.
  • Add the flour mixture to the butter mixture and mix until just combined.
  • Fold in the Rice Krispies and the marshmallows.
  • Drop scoops of dough onto a baking sheet (I use my medium scoop, about 2 1/2 Tbsp).
  • Dip the dough balls into extra Rice Krispies and top with a couple of extra marshmallows, if desired.
  • Bake at 375 for 9-11 minutes.
