Spinach Arugula Salad
Tender baby spinach and peppery arugula mixed with sun-dried tomatoes, red onion and pine nuts, all topped with a delicious lemon, dill, feta dressing.

For the dressing: 2 Tbsp lemon juice 2 Tsp dijon mustard 1 small garlic clove minced 2 tsp honey 1 Tbsp fresh dill finely chopped 1/4 cup crumbled feta 1/3 cup olive oil S&P For the salad: 6 cups baby spinach and arugula 1/4 cup Red Onion thinly sliced 1/4 cup Sun-dried Tomatoes chopped 2 Tbsp Pine Nuts
To make the dressing whisk together the lemon, dijon, garlic, honey, dill, feta and olive oil. Season well with S&P.
Add the spinach and the arugula with the red onion, tomatoes and the dressing. Toss well and top with the pine nuts and extra feta, if desired.
