When you need a quick lunch that tastes better than the leftovers on your kid’s plate.
A Chicken Spinach Wrap that is about to become your new favourite lunch. It’s quick, easy, and sooooooo yummy.
I am all about quick lunches, and sometimes that means throwing together a big bowl of literally whatever I can find in the fridge that nobody else has eaten. Sometimes this works out very well. Sometimes it does not.
Sometimes I want a sure winner and this wrap is one of my very favourite go-to things to make. All it requires is some leftover cooked chicken and a few things mixed up together in a bowl and then wrapped up in a soft tortilla with loads of veggies. Plus, it makes two, so one for now and one for tomorrow. Or you can share. I wouldn’t, but you can.
Anything special you need to know?
The only thing you need to make in advance is the chicken. And pro-tip: you don’t even have to do that if you don’t want to. Buy a cooked rotisserie chicken and carve it up. Or, if you’re lucky like me, your store will do that for you and sell you cooked AND shredded chicken.
And hey, if curry isn’t your bag just leave it out. Don’t have any apples? Grapes are awesome in this chicken salad. Not into fruit in your wrap at all? Celery will give you all the juicy crunch you need.
What Ingredients do you need to make this Chicken Spinach Wrap?
- Chicken – cooked
- Apple – whatever kind you have
- Green Onion – sliced
- Yogurt – the thick greek kind
- Curry Powder – I use mild yellow curry
- Honey – the runny, drippy kind
- Spinach – fresh baby spinach
- Large Flour Tortillas

Chicken Spinach Wrap with Curry & Apple
- 2 cups cooked chicken shredded or chopped
- 1/2 cup apple diced
- 1/4 cup green onion sliced
- 2 Tbsp mayonnaise
- 2 Tbsp Greek Yogurt
- 2 tsp honey
- 1 tsp curry powder
- 2 cups baby spinach sliced
- 1/2 an avocado diced
- 2 large flour tortillas
- Combine the chicken, apple, onion, mayonnaise, yogurt, honey & curry powder in a bowl.
- Mix well and season with S&P.
- Divide the chicken mixture between the two tortillas and top with the avocado and the spinach.
- Roll up the tortillas and slice in half, if desired.
