…with Snap Peas, Greek Yogurt, Cashews & Everything Bagel Seasoning
Or, Super Green Salad with a title longer than my arm. It’s important though because I really need you to know how many good things are in this shaken up salad and why I love it so much! Imagine the juiciest, crunchiest salad piled into a bowl and then aggressively shaken up (the fun part!) with creamy greek yogurt and tasty bagel seasoning. It’s crazy easy and so, so good.
my foodie Chatter…
I have been shaking up salads pretty much forever (well before the Kardashians I’ll have you know). I used to buy side Caesar Salads from a little pizza place next to the arcade (remember arcades??!!) near my house and they would come in these little styrofoam containers that I would hold tightly closed and shake the heck out of before eating them to get everything perfectly mixed. It always worked and became my go-to salad eating method ever since. So parents, don’t say “hanging out” is no good for teens. This is precisely where I learned this very important life skill that I am now passing on to you.
Salad shaking is without a doubt the very best way to ensure equal distribution of salad ingredients and dressing. Pass it on to the generations to come.
crunchy super green salad, the details…
This is an easy one… pile your salad greens and chopped up sugar snap peas into a lidded bowl. Scoop in some thick Greek yogurt (I like the full fat kind), squeeze in a little lemon juice and shake in a whole bunch of Everything Bagel Seasoning. Put the lid on and shake. Shake, shake, shake. Remove the lid, taste, add in S&P or more seasoning, if desired and then sprinkle on some buttery, crunchy cashews. That’s it. Healthy, satisfying, dead easy.
Recipe ingredients, tips, substitutions:
Lettuce – I love using crisp romaine hearts, but any crunchy lettuce will work (love this little article about lettuce types and how to use them – in case you need some inspo).
Cashews – I, of course, love to use my own Everything Bagel Cashews in this salad, but you can also use roasted salted cashews.
Lemon Juice – fresh lemon juice adds extra tang to the dressing, but you can easily sub in apple cider vinegar or white wine vinegar..
Add-ins – If you like extra nuts you can add in some almonds or pine nuts. Sunflower seeds are good too and it’s also good topped with crispy chickpeas.
More veggies – feel free to add in extra veggies to this salad. Cucumber is fantastic and even tomatoes and avocado are great. If you love herbs throw in some chopped cilantro, parsley or fresh basil too.
