Butterscotch and Chocolate Chip Cookies

With *optional* pretzels because sweet & salty is the BEST

These Butterscotch and Chocolate Chip Cookies are the marriage of so many of my favourite things… sweet chocolate chips, rich butterscotch, crunchy salty pretzels and chewy, easy to make no-chill cookies. I am all about getting cookies into my face as fast as possible when the craving strikes and so I want my cookies ready in 30 minutes, start to finish. Maybe 35 if I want to show enough self restraint to not burn the ever loving heck out of my mouth by eating them straight out of the oven.

The Pypers Kitchen is not complete without a fresh batch of cookies on the counter and on the rare occasion that there isn’t one, or at least a few emergency cookies in the freezer, I fear there will be a revolt. I will not let that happen.

Repeat after me: creaming is important. Don’t cheat here. I’m doing everything I can to get these cookies to you as quickly as possible so the least you can do is properly cream your butter ok? Thank you. So, we’re going to start by using an electric mixer because I work out but it would take the arm strength of an elite athlete to property achieve what we’re going for here by hand. Cream the butter and sugar together until it’s really light and fluffy. This will take at least 5 minutes on medium speed.

Next we’ll add in the egg and the vanilla and we’ll give it another good mix. Then we’ll mix together the flour, milk powder, baking powder, baking soda and salt & add it all in. Mix this just until it’s combined and then fold in the chocolate chips, butterscotch chips and the pretzels (if using).

Scoop cookie dough balls onto your baking sheet and bake them for 9-11 minutes. And remember the golden rule of cookies: slightly under is always better than slightly over. 🙂

Butter – I use salted butter in my cookies, so if you prefer unsalted add a little extra pinch of salt to the dry ingredients. The butter is melted, but not hot, let it cool a bit before you start. Pro-tip: you can also brown the butter for an extra pop of flavour (here’s how)

Brown Sugar – I’m a big fan of dark brown sugar, but light brown sugar is just fine too.

Chips – regular semi-sweet chocolate chips play well with the butterscotch. Extra dark chocolate chips are good too.

Pretzels – pretzels are optional, but so good. I like pretzel chips, but any pretzels are good.

Cookie Scoops – I always use my favourite cookie scoops for cookies. I use my mid-sized scoop which holds about 2 1/2 tablespoons of dough. (you can find the exact ones I use in my favourite tools list here).

Butterscotch and Chocolate Chip Cookies

These extra chewy, no-chill Butterscotch Chocolate Chip Cookies are so easy to make and definitely a favourite. I’ve thrown in a little extra something optional – pretzel chips – that I think you’ll love!

  • 2 cups flour
  • 2 Tbsp milk powder
  • 1 tsp sea salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 cup melted butter cooled
  • 1/2 cup sugar
  • 3/4 cup dark brown sugar packed
  • 2 tsp vanilla
  • 1 egg
  • 1/2 cup chocolate chips
  • 1/2 cup butterscotch chips
  • 1/2 cup pretzel chips chopped**


  • Combine the flour, milk powder, salt, baking powder and baking soda. Mix well and set aside.
  • In an electric mixer combine the melted butter with the sugar and brown sugar. Mix well, for several minutes, until very light and fluffy.
  • Add in the egg and the vanilla and mix for 2-3 minutes more.
  • Add the dry ingredients to the butter mixture and mix until just combined.
  • Fold in 1/2 cup chocolate chips, 1/2 cup butterscotch chips and the pretzel pieces
  • Drop scoops of dough onto a baking sheet (I use a 2 1/2 Tbsp cookie scoop).
  • Bake at 375 for 9-11 minutes.


**pretzels are an optional add-in but the salty crunch is so good.
