I’ve made that dish so many times because it is irresistibly good as it is, but also because I use it in so many different ways. Pasta, risotto, appetizers…
With the last batch, after I’d had my fill of eating silly amounts of them straight out of the pan, I made this ridiculously easy yet incredibly delicious soup that tastes like it is packed with all kinds of dairy and gluten. But it’s not. It’s like magic soup. And it is unbelievably easy to make.
Truth is, itās so easy I had to cook up some orzo to add in so it at least looked like I put in a little effort.

Anything Special You Need to Know?
*This recipe requires you to make my super easy Balsamic Roasted Tomatoes with Onions and Garlic first. Click here to go to that recipe.
*You can use any small pasta shape in this soup (or leave the pasta out altogether), but orzo is our favourite. I found a gluten free version here.
*I’m a big fan of tomato rice soup too, so you can also sub in some cooked rice for pasta if that appeals to you.

Easiest Dariy Free, Gluten Free Tomato Soup
Ingredients
- 1 batch of my Balsamic Roasted Tomatoes
- Optional:
- 1/2 – 1 cup vegetable broth
- 1 cup cooked gluten free pasta
- 1 Tbsp olive oil
Instructions
- Make the Balsamic Roasted Tomatoes.
- Add everything in the roasting pan to the blender and blend until smooth.
- Add vegetable broth, if desired.
- Transfer to a pot and add pasta, if desired.
- Serve, drizzled with olive oil.
