Wait. Dairy Free, Gluten Free Tomato Soup? That’s silky, rich and creamy? And really, really good? Yes, that’s right.
Remember those Slow Roasted Balsamic Tomatoes with Onions and Garlic I made recently? If you missed them I insist you go check it out right now. Click here. Go!
I’ve made that dish so many times because it is irresistibly good as it is, but also because I use it in so many different ways. Pasta, risotto, appetizers…
With the last batch, after I’d had my fill of eating silly amounts of them straight out of the pan, I made this ridiculously easy yet incredibly delicious soup that tastes like it is packed with all kinds of dairy and gluten. But it’s not. It’s like magic soup. And it is unbelievably easy to make.
Truth is, it’s so easy I had to cook up some orzo to add in so it at least looked like I put in a little effort.

*You can use any small pasta shape in this soup (or leave the pasta out altogether), but orzo is our favourite. I found a gluten free version here.
*I’m a big fan of tomato rice soup too, so you can also sub in some cooked rice for pasta if that appeals to you.
