Minty, Chocolatey, Oreo-ey… and so easy!!
Grasshopper Pie Brownies are my way of recreating the Grasshopper Pie my Mom makes every Christmas without having to go to all the work of making a pie. Not that it’s that much work, but I don’t see why I should take all the fun away from her. She does such a good job of it on her own.

If you’re not familiar with Grasshopper Pie then let me tell you that you have been missing out on one of the tastiest desserts ever. It’s a buttery Oreo crust filled with a fluffy, boozy, marshmallowy, minty, creamy filling that is just to die for.
This satisfies the craving the pie with much less work. I also left out the marshmallows and the Crème de Menthe, but hey, who am I to stop you from swirling a little marshmallow fluff on top of these babies and from drinking a little sip of liquor on the side. I will not. You go right ahead. Maybe even try this Grasshopper Cocktail on the side?

Anything special you need to know?
These are thin, fudgy brownies. You really can use any brownie recipe for these, so feel free to choose your fave. I like these ones because they’re my go-to easy, one-bowl cocoa brownies that stir together in minutes.
I also was lucky enough to find these green mint chips at my local market, but you can use any mint chocolate chip, or cut up another kind of mint chocolate candy. It’s all about mint, chocolate and Oreos. Such a good combo. 🙂

What Ingredients do you need to make these Grasshopper Pie Brownies?
- Butter – I use salted butter
- Cocoa Powder – unsweetened
- Sugar
- Eggs
- Vanilla Extract
- Peppermint Extract – optional
- Flour – all purpose
- Salt
- Mint Chips
- Vanilla
- Peppermint Extract

FAQs?
Because of the color. That’s it. It’s probably also so that adults can tell kids there are grasshoppers in their dessert. Every. Single. Time.
Absolutely. It’s all about the toppings. Any brownie recipe will work.
Absolutely. Add a handful of mini marshmallows along with the other toppings, or swirl a couple tablespoons of marshmallow fluff on top of the batter before you add the other toppings.

Grasshopper Pie Brownies
Ingredients
- 1/2 cup butter melted
- 1/2 cup cocoa powder
- 1 cup sugar
- 2 eggs
- 1 tsp vanilla
- 1/4 tsp peppermint extract
- 1/2 cup flour
- 1/4 tsp salt
- 1/3 cup mint chips
- 6 Oreos chopped
Instructions
- Whisk together the butter, cocoa and sugar until well combined.
- Stir in the eggs, vanilla and peppermint. Mix well.
- Fold in the flour and salt and mix until just combined.
- Spread the batter into a greased or lined 8×8 pan.
- Sprinkle evenly with the chips and the Oreos.
- Bake at 350 for 20-25 minutes.
