Summer Berry Salad with Air Fried Brie Bites. Ok friends, I don’t want to oversell this one, but this is the best salad you will ever, ever, ever eat. In your life. I swear.
Fresh, crisp, leafy greens dressed in a white balsamic maple poppyseed vinaigrette. Juicy, ripe, sweet summer berries. Crispy, melty, rich, Panko crusted air fried brie bites. If that doesn’t do it for you then I give up. I don’t know what else to do with you.

Summer Berry Salad with Air Fried Brie Bites, how to make it…
Dressing. Brie bites. Salad. Those are the elements of this salad and they are all quick and easy.
The first thing we’re going to do is toss our wheel of brie in the freezer. This ensures it’s nice and firm and much easier to bread. I throw the whole wheel in and then cut it after, but you can also cut it first and freeze the chunks. When you cut the brie you’ll cut off the outer edges to make it into a square, then cut the square into cubes, about 16 of them. This is purely aesthetic and full disclosure, I bread and fry the cut off edges too because I refuse to waste good cheese. 🙂
The dressing is my go-to dressing that I make all the time for salads I make with berries in them. It’s a simple combination of white balsamic vinegar, maple syrup, grainy mustard, poppyseeds and olive oil, well seasoned with salt and pepper.
The brie bites are breaded with Panko breadcrumbs and tossed in the air fryer for a quick five minute blast, and they come out with perfectly crunchy, crispy exteriors and gooey, melty centers. They’re amazing all on their own, but just wait until you taste them on this salad.
For the salad I like crisp, leafy mixed greens. They’re tossed with the dressing and then all the other elements are scattered on top, which ensures they stay fresh and crisp. I used strawberries, blueberries and raspberries, but you can use any combination of those or any fruit you like.

Recipe ingredients, tips, substitutions:
Brie – I use a large wheel of Brie and it makes a lot of brie bites, so you can use a smaller piece as well, you can just adjust to use smaller amounts of the breading ingredients.
Lettuce – fresh, mixed, leafy greens are my favourite in this salad, but you can sub in just about anything… butter lettuce, romaine, arugula, baby spinach, even shredded kale.
Panko – if you don’t have Panko you can use regular breadcrumbs. You can also sub in gluten free breadcrumbs and gluten free flour if that suits your dietary needs.
White Balsamic – if you don’t have any, the best substitute for white balsamic vinegar is regular balsamic or rice wine vinegar.
Berries – I like a combination of fresh summer berries, but you can use whatever you like. You can even switch up the fruit completely and use apples or pears or melons… anything.
Air Fryer – if you don’t have an air fryer you can pan fry the brie bites. Add a thin drizzle of oil to a skillet and cook the bites, turning often until all sides are brown and crispy.

Summer Berry Salad with Air Fried Brie Bites
Ingredients
For the dressing:
- 2 tbsp white balsamic vinegar
- 1 tbsp maple syrup
- 1 tsp grainy mustard
- 1/2 tsp poppyseeds
- 1/4-1/2 tsp salt
- pepper
- 1/4 cup olive oil
For the brie bites:
- 1 large wheel of Brie 350 grams/12 ounces
- 1/2 cup flour
- 2 eggs beaten
- 1 cup Panko
For the salad:
- 6 cups leafy lettuce
- 1 1/2 cups assorted berries
- 2 Tbsp fresh mint chopped
- 2 Tbsp sliced almonds
Instructions
To start:
- Place the brie in the freezer for about an hour.
Make the dressing:
- Whisk together the white balsamic, maple syrup, mustard, poppyseeds, salt, pepper and olive oil. Mix well and set aside.
Make the brie:
- Cut the edges off the brie to make a square. Cut the square into 16 cubes.*
- In small batches, toss the pieces in the flour, shaking off the excess, then into the egg and then into the Panko.
- Lay breaded pieces on a baking sheet until all are finished.
- Place the pieces in the air fryer and lightly spray with oil.
- Air fry at 400 for 5 minutes. While they cook…
Make the salad:
- Add the lettuce to a serving bowl. Drizzle with the dressing and top with the berries, the mint and the almonds.
- When the brie is ready, add it to the salad and serve immediately.
