Chewy Almond Flour Cocoa Cookies

If January had a cookie, this would be it.

Deeply chocolatey, sweet enough to feel like a real treat, but balanced enough that you feel no shame eating them for breakfast (at least I don’t). These Almond Flour Cocoa Cookies or as I call them – January Cookies – are this year’s iteration of my January Brownies that I make every year because It’s a lot for me to have Dry January AND cut back on the cookies, so this is my answer. They’re rich and fudgy, super chewy, naturally gluten-free, perfectly sweetened with coconut sugar and maple syrup, and made so quickly and easily that they might just blow your mind.

Chewy Almond Flour Cocoa Cookies

These Almond Flour Cocoa Cookies are rich, fudgy, chewy, and deeply chocolatey with a soft, tender centre. Made with almond flour, coconut sugar, and a touch of maple syrup, they’re naturally gluten-free, perfectly sweet, and perfect for baking when you want something indulgent but balanced.

Ingredients
  

  • 1 cup almond flour
  • 1/2 cup coconut sugar
  • 1/2 cup cocoa powder
  • 1/4 cup chocolate protein powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs
  • 1/4 cup coconut oil melted (not hot)
  • 2 Tbsp almond butter
  • 2 Tbsp maple syrup
  • 2 tsp vanilla
  • 1/2 cup chocolate chips

Instructions
 

  • Heat the oven to 350 degrees.
  • Combine the almond flour, coconut sugar, cocoa powder, protein powder, baking soda and salt in a bowl. Mix well
  • In a separate bowl combine the eggs, coconut oil, almond butter, maple syrup and vanilla. Whisk well.
  • Add the egg mixture to the flour mixture and mix well.
  • Fold in the chocolate chips.
  • Scoop onto baking sheet.
  • Bake for 7-9 minutes.

my pro tips for making the best almond flour cocoa cookies

The scooping – scoop the cookie dough onto the baking sheet, but don’t flatten them out. They will spread perfectly on their own.

The resting – almond flour cookies are delicate when hot. Allow them to rest for about 10 minutes on the baking sheet before moving them to a cooling rack.

The baking – don’t over bake the cookies. They’ll dry right out and we want them fudgy and chewy.

Maple Syrup – you can replace the maple syrup with honey, if needed.

Chocolate Chips – mix up the chips by trying dark, milk or white chcolate… or all of the above!

Espresso Version – add 1-2 tsp instant espresso powder to the egg mixture.

Spiced Version – add a tsp of cinnamon for a rich flavour variation.

I also love them as a post dinner chocolate fix with a tasty chai tea.

They’re perfect for a healthy-ish lunchbox treat for the kids or the grown-ups.

Storing – Store cookies in an airtight container for about 3 days. They are best on the day they’re made and will be slightly softer in the following days. After a couple of days I’ll move them to the fridge.

Make Ahead – to make ahead, the cookie dough can be mixed and refrigerated for up to 24 hours before baking. If chilled, let the dough sit at room temperature for about 20 minutes before scooping.

Freezing – to freeze, place cooled cookies in a single layer on a baking sheet and move to freezer. Once frozen, transfer to a freezer bag and keep for up to 2 months.
