The easiest impressive meal you’ll ever make!

This Arugula Salad with Steak is one of my very favourite meals. If I was eating alone and cooking myself dinner there is a very, very good chance this is what I’m having. Fresh, peppery baby arugula is dressed perfectly (if I do say so…) and topped with juicy, heavily seasoned, perfectly seared steak. I could eat this meal every single day. In fact I almost did at one point and now my family has banned it from regular rotation. 🙁

The ingredients are simple but the flavours are perfection. Arugula, steak, lemon, olive oil, parmesan… you’ll wonder how it’s as good as it is. And it is. So good.

I’ve written this recipe as a single serving because it is such a great dinner for one. It is also incredibly easy to scale up for any number of people you plan to serve.

Trust me when I tell you that this Arugula Salad with Steak is the perfect ‘movie on the couch alone with a glass of wine and a plate on your lap’ kind of meal as it a ‘wow Joni, you must have spent the entire day slaving away to make us this incredible meal’ that you serve at a dinner party.

Arugula Salad with Steak

The most impressive easy recipe you’ll ever make. In no time at all you’ll have an incredibly delicious meal that tastes like you slaved away. This is a per person recipe that you can easily scale.

Ingredients
  

  • 1 steak*
  • 2 cups arugula
  • 1 Tbsp olive oil
  • 1 Tbsp lemon juice
  • 2 Tbsp parmesan finely grated
  • S&P

Instructions
 

  • Season steak very well with salt and pepper.
  • Cook steak to your liking.*
  • Allow the steak to rest while you prepare the arugula.
  • Add the arugula to a bowl. Dress with the olive oil and lemon and toss well.
  • Season well with S&P and toss again.***
  • Add the parmesan and toss again.
  • Add the dressed arugula to a serving dish.
  • Slice the steak and lay on top of the arugula.

Notes

*Any cut of steak works. I like a strip steak, cooked medium-rare.
**I like to cook the steak in a skillet on the stovetop, finishing with butter. I spoon a little of that butter on top of the steak once it has been sliced.
***If you think you’ve used enough salt you probably haven’t. Taste and adjust as you go.

Arugula Salad with Steak Recipe ingredients, tips, substitutions:

Steak – I usually use a strip steak when I make this, but use your fave… rib eye, filet, flank, flat iron… whatever it is, just make sure you season it well.

Arugula – baby arugula is readily available everywhere these days so you shouldn’t struggle to track it down. If you can find grown up arugula come back and tell me about it because I’ve never seen it!

Lemon – fresh lemon if you can here please. We’re not using many ingredients in this dish, so let’s make sure they’re good.

Olive Oil – this is my preference but use another oil if you choose. Whatever you would normally use on a salad.

Parmesan – the real deal if you can please. You can also use Pecorino, Asiago, Feta, Goat Cheese or even Blue Cheese. I prefer it finely grated so it coats every leaf of arugula, but if you prefer shaved parmesan go for it.

Salt – salt is one of the most important ingredients in this recipe so use a good one. A good sea salt or kosher salt works well.

Arugula Salad with Steak Recipe Variations:

Spicy Version – add a good pinch of red pepper flakes when you add the parmesan.

Dressed up Even More Version – add chopped sun dried tomatoes and kalamata olives to the arugula salad.

Buttery Version – cook your steak in a pan and finish it with a butter baste. Spoon some of the butter over the sliced steak on top of the salad.

This recipe is nothing if not adaptable. If you’re making a nice summer dinner and are itching to fire up the grill outside then definitely grill your steak. If the weather isn’t co-operating or your significant other doesn’t trust you to use the bbq (some don’t, I’ve heard) then you can cook a darn good steak indoors using a grill pan or cast iron pan. Just remember to ventilate friends, ventilate.

Also, if you cook the steak indoors it give you the opportunity to do your best Gordon Ramsay and finish that steak with a heavenly butter baste… and feel free to spoon a little of that butter over the sliced steak on top of your salad. You will not be mad about this choice.

Once your steak is cooked to your liking set it aside to rest while you prepare your arugula.

This arugula salad is simple, with only a few ingredients, but you will be blown away by how good it is. My entire family loves it. Well, if I’m honest they did love it before I went a little overboard making it for pretty much every meal and that’s when they instituted the ban I told you about at the beginning. 🙁

The arugula is dressed with good olive oil, fresh lemon juice, real Parmesan cheese, quality salt and freshly ground black pepper. If you think I’m annoyingly emphasizing the descriptors of the ingredients you would be correct. But I’m not sorry… this is not the time to use squeezy lemon juice and shaky parm cheese. It’s just not.

Dress and season your salad. Taste it. Does it taste like you want to inhale the entire bowl? No? Add more salt. Now try. There… see?! Pile that salad into your serving dish.

Now, slice up that delicious steak and lay it on top of the arugula. Pour the wine. Dig in.
