Browned Butter Brown Sugar Homemade Kettle Corn

I know what you’re thinking… Homemade Kettle Corn? With Browned Butter? Is there no end to what she will put browned butter on??? No, no there is not. You know you love it too. Now go make this! What have you got to lose?

I know you might think it sounds scary and that you don’t have one of those giant farmers’ market popcorn kettles kicking around in your kitchen, but trust me, homemade Kettle Corn is way easier than it sounds. No special equipment required. The key is in the shaking of the pot. You want to shake pretty frequently while moving the pot on and off the heat to prevent sticking and burning. The whole process only takes a few minutes and the end result is so worth it.

FYI, I also love love love brown sugar. And popcorn. So really, this is many of my faves all rolled onto one. Soon to be one of your faves. Go!!

Recipe-ish:

Ingredients

  • 1/4 cup butter
  • 1/2 tsp vanilla
  • 2 Tbsp coconut oil
  • 1/2 cup popcorn kernels
  • 1/4 cup brown sugar
  • sea salt

Directions

  1. Brown the butter in a small pot and remove from the heat. Stir in the vanilla. Set aside.
  2. Melt the coconut oil in a large lidded pot over medium-high heat. Add in a couple of popcorn kernels and when the first one pops pour in the rest.
    Remove the pot from the heat, stir in 1/4 cup dark brown sugar and cover with the lid.
    Place the pot back on the heat for a few seconds then shake. Keep taking the pot on and off the heat every five seconds or so and shake occasionally so the sugar doesn’t burn. When the popping slows significantly, remove from the heat.
    Our into a bowl, drizzle with the butter and a good sprinkle of sea salt.
